If you are using the red,Dexcool, antifreeze it is a biproduct of oi mixing with air in the cooling system. You need to get a professional to clean and flush the system. Then use the green antifreeze. There is currently a class action suit in regards to Dexcool.

A leak from any water hose or the water pump, or even a freeze plug may be dripping down the side of the engine, making it appear it is a leak from under the engine. You need to get under the vrhicle to find exactly where the coolant is leaking from.

While a V6 Passat can sludge (as can any engine), it is not nearly as common as sludge issues on the turbocharged 1.8 liter engines. The reason for the difference is that the heat from the turbo, combined with an inadequate oil capacity (under 4 liters) breaks down the oil and forms sludge. The V6 engine, being a non turbo and having a larger oil capacity is less prone to sludge. However, as is the case with any engine, prolonged oil change intervals and cheap oil/filters will increase the risk of sludgeing over time. White smoke usually means your burning engine coolant in the combustion chamber. The only way to burn coolant is if you have a cracked engine block, which is unlikely, you most likely have a blown out head gasket. one way to check is if your coolant is low, wet spot under the vehicle when parked, and if your oil is a milky color. Also with a blown head gasket oil can get into your coolant check to see if your coolant is a dark color other than the normal light green or light red if its a GM car.
