If your engine needs oil, adding it when it hot will not have any adverse effect on either the oil or the engine. Just make sore you don't overfill and you'll be fine.
The engine will seize and lock up way before it gets hot enough to turn oil to ash.
If my engine is hot, I would not even notice that as it evaporates very quickly...in hot oil.

If the engine was void of any oil it would seize in the matter of minutes and yes the car would not work.
the engine gets hot and while your engine is running your oil is going through your engine lubbing it. by the time the engine gets hot the oil is spread throughout the engine. if you have too much oil in the gauge will act weird because its hooked up to your oil to read its pressure. if it was youroil pump or switch it would do this when the engine was cold to. make sure the oil is at the correct level b4 spending money on a switch or pummp

An engine without oil will quickly turn into a solid block of metal unable to move as the surfaces that rub against each other get too hot and weld together.
The oil thins when hot and the oil pump is driven off the engine so, the lower the engine rpm's, the slower the pump turns.
