As almost all religions at that time including Judaism and Roman religions, they certainly did sacrifice animals. However, I believe that you are referring to the idea that Druids performed human sacrifice. Though I certainly wasn't there at the time and so cannot give you a definite answer, the main evidence for human sacrifice conducted by the Druids are Roman writers including Julius Caesar who wrote
[The Gauls] believe, in effect, that unless a man's life is paid for by another man's, the majesty of the immortal gods might not be appeased. They use figures of immense size, whose limbs, woven out of twigs, they fill with living men and set on fire, and the men perish in a sheet of flame. They believe that the execution of those who have been caught in the act of theft or robbery is more pleasing to the immortal gods; but when the supply of such fails they resort to the execution even of the innocent.
Though this would seem to prove something, it does not. This piece of writing should be looked on as suspect because the Romans were just as guilty of cooking up Propaganda to justify invading regions as we are today. Furthermore the evidence for the druids performing human sacrifice is either entirely Roman which should be viewed as suspect for the reasons stated above, or is written by Christian writers which should be viewed as even more suspect because Christianity in the later Roman era and later antiquity were constantly persecuting Pagans.
What may have been the case, as Druids were not united in one complete religion or set of deities, is that some groups of druids did perform human sacrifice and some did not.
