But the difference is that when you separate ions from each other and break up their ionic lattices you replace the favorable electrostatic (+/-) interactions they had with each other with many many favorable ion-dipole interactions with the water. When you separate gold atoms from each other they are neutral and so non-polar. So there would be little or no incentive for the gold atoms to want to hang out inside water.
