It depends on the rice. Many of the nutrients in brown rice are in the bran, which doesn't wash off easily, so washing brown rice doesn't seriously deplete the vitamins.White rice is milled; the bran layer has been polished off, which means that most of the vitamins have been removed, also. However, most brands of white rice are enriched; they have been coated with vitamins (thiamine, niacin and folic acid), as well as iron, after milling, to restore the nutrients that were lost when the bran was polished off. The enriched coating washes off fairly easily. Many brands of enriched rice advise against washing on the label.Parboiled rice is steamed with the husk on it before polishing, which causes some of the nutrients from the bran to be absorbed into the grains. Consequently, washing parboiled rice does not remove as much of the nutrients as washing enriched rice.Milled white rice which is not enriched has very little of the vitamins left, so washing it doesn't make much difference in nutrition.
