Yes. When I have fresh vegetables I steam them as little as possible on the stove or in the microwave. The longer something is cooked it usually has fewer vitamins. I am not a nutritionist. with fruit and vegetables, 90% of the goodness is directly under the skin. when y peel these you loose it when u cook in water you cook out more goodness from the little that was left you then pour the goodness down the drain masjhed potatos is a good example u then add butter and milk to make it taste edable
