A small portion of the sour left over mash from the previous
batch is taken from the still and added to the new incoming mash.
What that does it adds continuity from batch to batch also helps
control the pH of the mash which is a crucial thing
The 'mash' is a mixture of grain, malt and water and some mash
from a previous batch which will contain live yeast. It does not
refer to the flavour of the whiskey but the process in which it is
made
