There's only one 'b' in caballero. It derives from caballo, which means horse. Caballero most literally means 'horseman,' however, over the years, it has come to mean, "A man who behaves with nobility and generosity;" in short, a gentleman. It can also be used as an adjective meaning 'gentlemanly.'
