In terms of nutrition it's no difference between MTBing and any other endurance sport. If you really want to prep for a (long) ride, look up carbo-loading as done by marathon runners, triathletes and similar. Otherweise, just have a light snack and you're good to go.
Because it might get all mouldy and you can get sick, sometimes its still eatable before its out of date but its your choice to take the risk to eat it or not it depend what it is and how it looks :)
