I have and it works okay. It has a bit of a tang that fresh cabbage doesn't. Just remember to eliminate any salt in the recipe as sauerkraut is very high in salt.

Sauerkraut and rotkraut are both traditional German side dishes, but they differ in ingredients and preparation: Sauerkraut: Ingredients: Made from finely shredded cabbage that is fermented with salt. Flavor: Tart and tangy due to the fermentation process. Preparation: Cabbage is salted and left to ferment in a cool place for several weeks. Serving: Often served with sausages, pork, or as a topping on sandwiches. Rotkraut (also known as Rotkohl): Ingredients: Made from red cabbage, often cooked with apples, vinegar, and spices like cloves and bay leaves. Flavor: Sweet and sour, with a richer flavor profile compared to sauerkraut. Preparation: Red cabbage is simmered with the added ingredients until tender.
