How do you find truffels?

It depends on the type of truffle that you are after.
Black Périgord Truffle (Tuber melanosporum) or Black truffle - This truffle grows only with oak trees. They are located undergroung near the roots of the tree. They can be found in late autumn and winter. These truffles are almost completely limited to France, Italy, Spain and a few in Slovenia and Croatia.
Alba Truffle (Tuber magnatum) or White truffle- This truffle grows with oak, hazel, poplar and beech. It can be found in the autumn. They can be found in Italy, Croatia, and possibly a few other Europen countries. It is possible to use a sow to locate the truffles as they produce a scent that mimics a male pig sex hormone, but dogs can also be trained to locate truffles.
Chinese truffle (Tuber sinensis, Tuber indicum, Tuber himalayensis)- This truffle is only harvested in China.
Black Summer Truffle (Tuber aestivum/unicinatum) Grows with oak, hazel and beech trees. They are collected from June to November in Italy, central Europe and the UK, Turkey, and North Africa.

Truffles are found by raking away organic material at the base of trees. Traditionally female pigs were used to find some varieties of truffles however dogs are now used for most truffle hunting.
