One thing I've done is to buy some all-natural organic salsa to dip the celery in. This provides you a flavorful snack that's low in calories and has a great crunchy texture. A final idea is to dip celery (or apples, etc.) in peanut butter. Don't be scared by the high caloric/fat content in the peanut butter. The fat in nuts is high in mono-unsaturated fat (aka the good kind). Eating one or two servings a day is a great way to keep your body fueled and your belly feeling full.
