We can guess that most serfs were Catholic or Orthodox.

Not everyone was Catholic. There were other religions practiced, including Islam, Judaism, paganism, and a few others, but serfs tended strongly to be Christian. There were also different types of Christianity, and these ranged from the merely heterodox to the heretical. The Albigensianism had a following among peasants, as did some other groups. Gnosticism and Arianism were earlier heretical groups, though they might not have appealed to peasants much. Certainly later heresies, such as Waldensianism, may have had following among peasants, and Lollardy certainly did.
