*Most Italians in Italy demand fresh food. Depending on where they live in Italy they will eat what is fresh and available. And What they can afford.

Fresh fish and seafood, mussels, shrimps, squid and other seafood are enjoyed. Pasta is still eaten and enjoyed by most Italians every day. Italians also eat white rice, and potatoes but not with their pasta. Fresh bread bought daily is still the norm.

Chicken, pork, veal are eaten. Whole Turkey are available at Christmastime.

Beef is used in much less amounts than Americans eat it. There are Sausages fresh and cured usually made from Pork. Cured meats and many delicious cheeses.

Many types of cakes and pastries are available in shops made fresh daily. Ice cream i which in Italy is Gelato a bit different than Ice cream is very much a favorite in Italy .There are Pizza shops with delicious take out squares of pizza , enjoyed very much by teenager, young people and tourists alike.

Fresh fruit and vegetables in season are important- the tomato, bell peppers, green onions, yellow onions, garlic, fennel, capers, olives, mushrooms, carrots, cauliflower, zucchini, eggplant, all types of greens and lettuces, in season fruit, lemons, Oranges watermelon, apples, pears nectarines. Herbs & spices include rosemary, black pepper, basil, thyme, parsley, salt, red pepper flakes. Olive oil is used much. to cook with and to dress salad. Hazel nuts and pine nuts are used too.
