It is called "SATTU" In some parts of eastern India, black (they are actually dark brown) variety of chick peas, aka Chana dal/Bengal gram is also used to make the Sattu. Sattu is considered a poorman's meal. It is used in the north as a drink, with 2-3 tablespoons of the malted barley powder stirred into cold water sweetened with jaggery or regular sugar. This drink is popular during the hot dry summer months, before the rainy season sets in. It is a very cooling drink & very hydrating & nourishing too. In the winter, the powder is fried with a little ghee, & then cooked into a halwa using water & sugar. In Bihar, it is used to make the stuffing for a local unleavened bread called litti. Litti are balls of unleavened dough stuffed with prepared sattu & then roasted directly over ambers till cooked. In the villages they are cooked over a fire made of dung cakes, which provide the ideal uniform heat to cook the littis. The litti is usually eaten with a potato curry called chokha. This is a very localized rustic meal.
