There is only one screw you can adjust on that, other than the idle, which should be at 1100 rpm when at running temp with no choke on. The Air/fuel mixture screw is pre-set at the factory and sealed. You can get that seal out of there to adjust them but that is usually only done if you are rebuilding the carbs or doing a complete carb cleaning. They are 1-1/4 turns up from bottom at a light seat. If your carbs are dirty you will be there all day and it will never be right. If you do the cleaning, turn the screw in to a light seat and count how many turns it was so you can put them back the same. Any other questions you can email me at jseamix416@Yahoo.com. I have an 81 xs1100sf special that I just got done with. I did a valve job, seals, timing chain, re-built the carbs with new kits. Running great now. Good luck
On the 1981 Yamaha XS 1100, the adjusting fuel and air mixture screws are located on the carburetors. Specifically, they can be found on the side of each carburetor body, typically near the throttle linkage. To adjust them, you may need to remove the carburetors from the bike for easier access. Be sure to consult the service manual for detailed instructions and specifications.

The seat height of a 1981 Yamaha Maxim 550 is 29.3 inches. That height not really adjustable, but frame modifications would probably lower it.
