Whyyy? first of find a 7.1 movie........- then a 7.1 DVD player that process the signal and send it separately to each speaker through RCA jacks,.... feed your 5.1 with front, center and surround and your 2 channel with the rear surrounds and good luck. your 5.1 digitally process the signal and send it to the speakers at the right time I do not know if the 2 ch is capable to process the back surround signal and when is going to send it, maybe works. if not get a nice 7.1 Yamaha.

Most TV programs are now transmitted in stereo. If not, the TV will switch to a mono signal. Since you didn't say whether it was displaying stereo or mono on the screen while you're watching or if it's a choice in the TV's set-up menu, I can't say much. If you're watching, it's just letting you know if it's in stereo or mono. If you're setting up the TV, it's asking your preference. Do you want your sound in stereo or mono?

If it has auxiliary inputs, such as a line level input, then yes, it should be able to serve as an amplifier. Be warned though that it probably won't work well as a guitar / instrument amplifier.

Stereo amplifier? There isn't one except the one inside the stereo receiver. I had to build a mounting bracket for my aftermarket amp out of 1x4 lumber and wood screws, but I'm sure there are better ways to go about it, although that way is arguably the cheapest.
It depends on the speakers. Bose computer speakers are not designed to connect directly to speaker inputs on your receiver, as they have their own amplifier. All Bose home stereo speakers can be connected.
