What do the volturi do at night?

The Volturi comes to find the Cullens, because they hear of a baby (Renesmee), who they think is an immortal baby. Immortal babies are shunned, and so the Volturi comes to kill her. The Volturi had already decided that they want to get rid of the Cullen as the cloven is getting too big and they are fearful of the Cullen, so they need a reason to get rid of the Cullen and that's Renessme as Irina saw her and though that she is the immortal child.

The Volturi are the oldest vampires in the book, New Moonand they believe to make the rules such as you cannot give birth to an immortal child, decieve them and try to kill them. In other words, they think they can enforce a law on all the vampire clans. The main Volturi are ARO, MARCUS, and CAIUS and then after them would come their guard, Alec, Chelsea, Aton, Corin, Demteri, Felix, Heidi, Jane, Renata, and Santiago. And after them the wife's Sulpicia and Athenodora. They live in Volterra, in Italy. Volterra was once ruled by the Romanian coven, Stefan and Vladimir who come in the last book, Breaking Dawn, to witness for the Cullens.

But if you haven't read the book yet, then stop reading now. I don't want to spoil anything for you!

Ok, so in New Moon, the Volturi become a threat in the end of the book because after receiving the news from Rosalie that Bella jumped off a cliff and killed herself (Which was a misunderstanding) he decided that he couldn't live without her so he went to the Volturi and asked them to kill him.

The Volturi were very interested in having Edward on their 'team' because of his mind reading abilities and they refused to kill him. So he decided that the only way to make them kill him was to threaten the secret of the Vampires.

So in the afternoon, at the town square where all the humans were, he was in an alley, waiting for the sun to be fully up, and then he was going to walk out into the sunlight which would blow the secret of vampires because he sparkles.

But Bella saves him just in time, thought the Volturi have already spotted Edward and even though their secret is no longer a threat, they want him to go to their underground lair to speak with the rest of the Volturi.

That is when the become interested with Bella as well because she is a human, and Edward is a vampire.

They don't really do anything else in new moon.

They don't become a huge threat until Eclipse and Breaking Dawn.

They will clean up all the mess to coverup the vampire things, but apparently Cullens already handle it. They have slayed all new vampire that Victoria had created as well as Victoria herself.

The Volturi guard consists of 32 members, including Jane, who creates illusions of pain; Alec, who is able to block the others' senses; Demetri, who can track anyone once he has the tenor of their mind; Chelsea, who can change emotional bondings; and Renata, who can make anyone feel distracted and wandering when they are near her (classified as a "shield"). The majority of the Volturi remain nameless throughout the series. There is also a human secretary named Gianna who appears in New Moon. Despite her hopes to become a vampire, she is killed by the Volturi by the events of Breaking Dawn. The Volturi have invited Carlisle, Edward, Alice, Kate, Benjamin, Zafrina, and Bella to join them, though all have refused. :)
