Soak the rice in 2 cups of water for about an hour before you cook it.
Heat the ghee in a fairly large cooking pot. Add the cumin seeds one the ghee is hot and let them splutter. Add the whole spices (Cinnamon, cardamom, black pepper corn and the bay leaf). Once you get a fine aroma of the spices, add the ginger garlic paste and saute till slightly brown, put in the diced onions and saute until they turn translucent. Then add the carrots and french beans and stir well. As you feel that the vegetables have changed color slightly, add the peas. Stir again, drain the rice and add it to the pot. Mix well for 2 to 3 minutes. Add the spice powders with a pinch of sugar and salt to taste. Then pour 2 ladles of warm water, mix and cover the pot and let the rice cook on a low flame. Keep checking on it so that the rice doesn't stick to the pot or get burnt. Turn off the heat once you see that water has dried and the rice has cooked well. Try and press a grain of cooked rice with your fingers, you will know that the rice is cooked if the grain breaks into 2 pieces. If it turns into MASH, that means the rice is over cooked. Sprinkle roughly chopped mint and coriander.
Serve hot with some Indian raita or any salad with a yogurt dressing.
