Soak the rice in 2 cups of water for about an hour before you cook it.
Heat the ghee in a fairly large cooking pot. Add the cumin seeds one the ghee is hot and let them splutter. Add the whole spices (Cinnamon, cardamom, black pepper corn and the bay leaf). Once you get a fine aroma of the spices, add the ginger garlic paste and saute till slightly brown, put in the diced onions and saute until they turn translucent. Keep checking on it so that the rice doesn't stick to the pot or get burnt. Turn off the heat once you see that water has dried and the rice has cooked well. Try and press a grain of cooked rice with your fingers, you will know that the rice is cooked if the grain breaks into 2 pieces. If it turns into MASH, that means the rice is over cooked. Sprinkle roughly chopped mint and coriander.
