The 1970s Fender Guitars (including bass guitars) are highly desirable models, especially those in near mint, fully playable condition. At auction, a 1975 Jazz Bass in similar condition could bring $1200 to as much as $2000 or more, particular if it has a case and is as close to mint as possible. Expect a retailer to price a unit at the higher end of this range.

Was there a jazz bass with a single pickup?

No, there is no such thing. The first Fender Jazz bass came with two pickups and that formula has been maintained to this day. The only "Jazz Bass" with one pickups is the Fender Mark Hoppus signature Jazz Bass, which comes with a single Precision Bass pickups. That particular bass sounds nothing like a standard Jazz Bass.
