It having four movements, we need to "feel", we first must capture and absorb the notion of speed of the various movements, also watching the type of composition and its structure for performance according its origin time. Mozart stipulated (or suggested) the following: I. Allegro; II. Romance: Andante; III. Menuetto: Allegretto; IV: Rondo: Allegro; so it is not difficult for a conductor or a good chamber orchestra (even with no conductor) to find good speed time for every movement (so or so beats per minute - approximately), noting that the romance is slower than the others, while the rondo certainly is the fastest one of the piece.
