s-Video is pretty much a dead standard. You should use it only if your tv does not have component video or HDMI.
The Bose 321 system does not support Hi-Def inputs, so the best idea is to use it just for sound. Connect the digital audio output of the Cable box to the optical input of the 321. Connect an HDMI cable from the Cable box to the TV directly.
If your tv has an audio output you can connect it to the aux input of most Bose wave systems.

Depending on the system and the connections you will have the L/R (white/red) connections on either the panel that goes behind the unit or the unit itself. You would have used these connections to connect your TV/cable anything else you may have going through the Bose. Then just use a normal line out/audio cable, this will be black and red and then a normal audio jack at the end, black goes in the white terminal and red in the red obviously.
