Literal Back-Turning

The Torah is one of the most sacred objects, and it's considered disrespectful to turn your back on it. Similarly, the Talmud says not to turn one's back on one's teacher or the Holy Temple (Yoma, 53a and 77a).

Metaphoric Back-Turning

If the question is taken more metaphorically, i.e. as to ask why Jews still continue to follow the mandates of the Torah as opposed to jettisoning them for some other faith or Atheism, it should first be noted that the Jews that remain today are not all of the descendants of Jacob. Many hundreds of thousands of Jews have converted out of Judaism over the past 3000 years, usually because of political or social benefits that could be gained by leaving Judaism. Those who remained were those who saw their faith and beliefs as things worth saving, regardless of the physical and material costs. This naturally selects for people who are more devoted to their traditions than those who would say that they are nominally Jewish. More recently, especially in countries like the United States, where being Jewish or not confers minimal if any societal detriment/benefit, there has been a corresponding increase in the number of nominal Jews, who, in previous centuries, might likely have peeled off into other faith groups.

However, most Jews see the Torah as the lifeblood of their people, holding profound messages of wisdom and proper behavior. It is seen as a key moral guide and a method to achieve a relationship of superior quality with both the rest of humanity as well as with the Divine. It also represents the continuity of the Jewish historical experience in that our Torah-scrolls contain the same words and are created in the same way as Torahs have been for centuries. In these aspects, it also creates unity within the vastly differing and bickering splinters of the Jewish community. Even those who are not fully observant, view the Torah as that which is to be honored and aspired to.

How did the covenant shape Jewish history?

The covenant between God and the Israelites ensured that the Jews (a.k.a. Israelites) would always keep the Torah. This, in turn, led the Jews to study Torah, to maintain a scholarly class among Jews, to write books of commentary and Jewish thought (so the Torah wouldn't be inaccessible due to lack of understanding on our part), and to keep ties between the various Jewish communities (so Judaism wouldn't inadvertently split into different religions). The keeping of the Torah's commands created many ramifications, such as Jews having supported the poor, maintained synagogues and places of Torah-study, ascertained a supply of kosher food, etc.See also:What_is_the_covenant_of_the_Hebrew_peoplehttp://judaism.answers.com/jewish-history/timeline-of-jewish-history

What is the religion of the orthodox Jew?

(Orthodox) Judaism. Orthodox Jews believe that the Torah must be fully observed (Deuteronomy 13:5). They keep the laws of Judaism as codified in the Shulchan Arukh (Code of Jewish Law), which lists the laws of the Torah and Talmud. Torah-study is seen as very important (Deuteronomy 5:1); and the modern world is seen as subservient to the Torah (Talmud, Nedarim 32a), not the other way around. Other Jewish groups (Conservative, Reform) adapt, curtail or change the Torah-laws in contemporary life, to a greater or lesser degree.
