Ledos has been saying they are "working on it" for two years. It's not that hard to work on. I really wouldn't count on them following through. Perhaps they are hoping it's nothing more than a craze, and it will soon end. Ledos, by the way, is one of my favorite pizzas and they do not get my business. Grotto in Rehoboth has best gluten free Pizza crust ever. Even Mamma Lucia has a gluten free crust, and so does ZPizza. They are not great crusts, but at least they are not just "working on it."

What is gluten protein and how does it affect individuals with gluten sensitivity or celiac disease?

Gluten is a type of protein found in wheat, barley, and rye. Individuals with gluten sensitivity or celiac disease have adverse reactions when they consume gluten. In celiac disease, the immune system attacks the small intestine when gluten is ingested, leading to inflammation and damage to the intestinal lining. This can cause various symptoms such as digestive issues, fatigue, and nutrient deficiencies. In gluten sensitivity, individuals may experience similar symptoms but without the autoimmune response seen in celiac disease.
