" Angel Food cake is a type of sponge cake known and named for its airy lightness. Usually made with cake flour because of its light texture, Angel Food cake has no fat. It is also made with stiffly whipped egg whites; all of which attribute to the cake’s airy lightness and delicious taste. Angel Food cake is usually baked in an ungreased tube pan which is inverted during the cooling stage to prevent the cake from collapsing. They are most commonly drizzled with a glaze or sweet fruit sauce rather than the traditional icing or frosting."

After reviewing many recipes on line, I've selected three that are simple enough, see the links below.

Some tips not included in the recipes:

  • You should have a flat bottom tube pan that separates into two pieces to make cake removal easier; if you don't, at least a one piece flat bottom tube pan. If you have a one piece, cut a liner from wax paper or cooking parchment that will lie flat in the bottom of the circle. You can trace the bottom of the pan on the paper and cut it to fit. The liner will ease the release of the cake from the pan because...
  • You do not grease the pan, any trace of grease will defeat the fluffiness of the cake. Don't use plastic bowl or plastic utensils, they will defeat the whipping process.
  • You can whip the batter with a wire whisk but it's a lot of work, an electric mixer will work fine.
  • Bake until the top is deep golden brown; do not under bake.
  • Cool the cake upside down keeping the two piece pan together; this will prevent the cake from falling or losing it's shape as it cools.
  • When the cake has completely cooled, run the blade of a knife all around the outside of the cake in the pan, then all around the cake against the center tube. This is where you separate the two piece pan, then run the knife along the based of the cake to release it completely. If you used a one piece pan, the cake will hopefully release by using the knife around the outer and inner surfaces of the pan and then turning it over (if the paper liner did it's job).

A chiffon cake might not rise properly if baked in a regular pan instead of in a tube pan. The tube pan (angel food) allows the cake to bake from the center as well as from the sides.

A make-shift tube pan can be created by placing an oven-proof glass in the center of a regular pan. However the regular pan needs to be 3" - 4" deep to contain the volume of the chiffon cake as it rises.

you can leave a cake in a cake pan over night or two, as long as you want. The question is what for?

As far as I know, you should let a cake cool a bit, for 10-15 minutes, and then remove it. If you leave it for too long, it'll stick to the pan.
