What amount of milk would you use in a bread machine recipe to equal a tablespoon of nonfat dry milk?

If your liquid in the receipe is 1 cup of water etc. decrease the water 1/2 c and replace it with 1/2 milk 1/2 water, i am not sure but i think the dry milk adds calcium to the bread or the white color. When I do bread it seems I mainly use water, oil or some type of liquid, I think that Tablespoon of dry milk would equal 1 c of milk, you would have to taste it.

Can I grease the pan of my bread machine so that the bread comes out easily?

You can try oil your pan, but the dough is likely to absorb the grease when it is kneaded by the machine.

I have found to make it come out more easily I take the pan out of the machine (warning hot) as soon as it has finished baking, place upside down on a bread board covered with a cloth, I then wiggle the cog/s on the bottom a bit to release the mixing paddles, this is often enough to make the bread come out easily. If not leave to cool for a while and try again. The steam from the bread will form inside the pan as it cools and make it come out more easily. You will also get a progressively softer crust to the bread the longer it steams itself. And as the steam rises up and the top of the bread is down with the cloth under you prevent the top getting to much steam and making it wrinkly.

Otherwise if you want a harder crusty bread. then turn over and wiggle the cog/s to release the paddles. And then if still sticling turn back up and slide a silicon spatula around edges to loosen to get it out.

Another trick is to time when your bread machine has completed it final knock down before the last rise of the dough (avout 1hour5 minutes) and then in future set a timer and then to remove the paddle/s at that point. This also has the advantage of reducing the size of the hole/s in the bottom of the loaf and you are removing the paddle that acts as a hook and so make it easier for the loaf to come out. Also this has the advsantage that you can at the same time even out the dough in the machine to stop ski slope loafs or even divide it into buns or plait it etc for effect. And you could then also grease the pan at this point.

If bread machines makers could only make the machines to beep at this point it would be good!
