Hmm... that's touchy. Honestly, depending on just how bad this man's health is unless he is within finger's reach of sufficient insulin, plenty of food, and most importantly a hospital he'd die pretty quick. Probably a heartstorm or spontaneous kidney failure (even if he undergoes regular dialysis) not to mention his eye sight might disappear within so many minutes just before unconciousness.

If you're thinking about trying this as a prank DON'T DO IT!! Regardless of the legal definition, morally if you do this knowing his vulnerabilities it's kind of like comitting first degree murder especially if he's a type 1 (insulin dependant) diabetic.
