I saw some people eating marsh crabs (whole) on Iron Chef. They were tiny and cooked as part of a dish. I believe these are related to fiddler crabs. I also found a recipe if you are interested:
Fiddler Crab a la Nero

1/4 cup butter or margarine
1 pound king crab meat
1 (4 ounce) can pimientos drained and halved
2 tablespoons snipped chives
1/4 teaspoon salt
1/4 teaspoon paprika
1/2 cup canned beef gravy
1/2 cup heavy cream
1/3 cup cognac
Cooked white rice
Melt butter in chafing dish or medium skillet. Arrange the crabmeat around edge of dish. Place pimientos in center. Sprinkle pimientos with chives. Sprinkle crabmeat with salt and paprika. Add gravy and cream. Cook over low heat, until mixture is heated through, stirring crabmeat gently to keep pieces as whole as possible.
Warm cognac in small saucepan. Ignite with match. Pour flaming, into crabmeat mixture.
Serve over rice.

What fruits and vegetables do hermit crabs eat?
The best diet for a land hermit crab is basically what you feed yourself (with the exclusion of highly-processed foods and sugary snacks, of course). They also enjoy steamed shrimp tails and any sort of dead crustacean. Yes, they are cannibals, it is a studied and proven fact. It is recommended that meat be put into the crabitat at night and removed in the morning to discourage flies and other, unwanted scavengers from visiting the crabitat. • Nuts, applesauce, raisins, trail mix, peanut butter, honey, cooked egg, cereal, crackers, washed grass, and popcorn are some of the miscellaneous favorites people have reported their crabs enjoying. • Dairy foods may be given to the crabs in small amounts and not too often.

Um... Yea, I've got a sand crab... They didn't sell crab food in the pet store anymore cause the sold all their sand crabs to the other pet store... So I decided to see if it'll eat fish food instead & yea it ate all of it until it was satisfied but I feed it while it was underwater cause I fed it goldfish food (flakes)
It is important to note that, as a scavenger that is harvested out of the wild, hermit crabs can very easily be toxic, and certainly unpleasant to eat, much like seagulls or pigeons. Anything a scavenger eats, you eat too, if you eat the scavenger. And scavengers are far less picky then humans, and far more hardy against disease and toxins. Scavengers also often have parasites that, while relativly harmless to them, could be dangerous to other species.
Hermit crabs have almost no "meat." If you have ever seen a lobster being eaten, you can see how little can be consumed. And the Chitin that makes up the hard outer skin of the crab is, by design, immensely tough and therefor inedible.
So, in theory, while a Hermit Crab could be consumed, it would be a disgusting and potentially dangerous meal that provides no nutritional value. This is not including the fact that the process of preparing the crab to be eaten would be immensely cruel to the crab.
