Is gelatin a good thickener for stew?
It will thicken it but the stew will be very sticky/glutinous to eat.
I would suggest you thicken your stew with a 'roux'. A roux is equal quantities of butter and flour mashed up together (while cold) to make a paste. At the end of cooking (and while the stew is still boiling hot), add teaspoons of this paste to the stew little by little, stirring it in well (it will not form lumps if you stir it in properly) until you reach the thickens you want. At the end cook the stew for a further 10 minutes stirring continuously to cook the flour out.
Alternatively mix a little cornflour with water to make a runny slurry and pour this into the boiling hot stew and stir.

Gelatine is an animal derived setting agent - it's clear and practically tasteless. It's obtained by boiling the animal carcases, once all the meat has been removed, then straining the water to obtain the gelatine. Beef gelatine is from cows (sometimes called bovine gelatine). Gelatine comes in a powder form, or as a clear sheet (or 'leaf'). It dissolves in water, enabling substances to 'set', like jellies. A vegetarian alternative is agar gel, sometimes called "agar agar" gel. It's derived from seaweed and has a higher melting temperature (so you can serve a jelly with a warm sauce without the jelly melting).
