The only gametype for this is Infection, whereas if you die by a zombies hands, or commit suicide, you join their ranks. Yet there is only two teams. I highly doubt that you can alter the game to change teams without using some crazy mod.

Get use to all the maps, Find all vantage points and vantage points other people will use against you. Find all weapon locations and all spawn points. Find flank routes and quick ways to your favourite weapons on all maps. And generally a Team who all have Mic's. Hard I know but have friends playing who have Mic's. My #1 rule to pwning in Halo 3. DONT BE A LONE WOLF. They die a lot and can get double/triple or quad teamed by the other team!
