Do you remember the large group of ducks that you passed before you found DetritusTrolg? That's where you need to go. You'll notice that there isn't a bridge where the ducks are. Travel to the east for a bit and you'll find one. Use your magnifying glass while you're on the bridge and you'll find the hat.
Bring it back to DetritusTrolg and it will tell you that the hat needs to be fixed.
Bring the hat to an engineer, MrBridger. He's not quite sure what to do with the hat because he's never worked with the gears that are used in it. He suggests bringing the hat to someone who knows about gears.
Travel to Sunny Glade Isle and take the hat to LordChimes. He says he can fix it if someone could fix the rotor blades.
Bring the rotor blades to LordSteel on Barren Isle. He's too busy to fix them, but he points you in the direction of MissFlameSan on Snowflake Isle.
Travel to Snowflake Isle and talk to her. She agrees to fix the blades in one hour for $5,000. Return after being online for an hour to pick up the blades.
Bring those blades to LordChimes who can now fix the hat's gear system for $7,000 in three hours. Wait for the three hours and then return to pick it up.
Finally, you need to get the hat part fixed by a milliner. Talk to MrQuickerSilver on Dry Isle about the hat. Of course he needs a ton of time to fix it, a whole two days, and $10,000.
Pick the hat up after two days and bring it back to DetritusTrolg to finish the quest.
Reward: 15 Golden Feathers, a key, and 75qp

There are dozens of breeds on HorseIsle 2, and they semi-regularly add more (so it's nearly impossible to answer this question correctly).

A mother horse stone is one of the few Lucky Finds across HorseIsle. It is a large stone found on the desert isles (except Dry Isle of course). The "Mother Horse" gives you a large sum of money and hints that you should use it to better your horses. The value ranges from $5-100k, but is usually on the higher end of that spectrum.

Esroh Pitchfork: Talk to Aphrodite (you do not have to finish her Esroh Quest first). She'll ask for 10 silver wires, a log, 10 spools of beading cord, one pinch of colorful dust, blue sapphire, and esroh material. Return with these items and she will craft it for you. This tool will increase your maximum horse slots by 25%.

To water or feed your horses on HorseIsle 2, click the "Horses" tab on the toolbar in the middle of your screen. Then click to "VIEW" your horses how you'd like them sorted - this dictates the order your horses appear in to others as well as just you. Then, click to view the horse you'd like to care for, and hit the "FEED" button underneath their basic information (name, breed, color, gender, ranks). Then click the "Consume" button next to the pail of water or food item you would like to feed your horse.

First, you go to your scroll over your "Profile" tab, then go to your "Account" page, then go to "Edit My Account" (the square button in the middle, not the one at the bottom). Once on the edit page browse your hard drive for a file that you wish to use that is within the avatar restrictions for Howrse: max image size 120x120 pixels, 40kB file size and GIF, JPG or PNG file format.
If you want to create an avatar, use any image editing software from MS Paint to GIMP, and save the image as PNG, JPG or GIF file format and select that image from the aforementioned page on Howrse.

You go to the Penman family, which is in PlainTon. The lady will tell you to find PrinceDaring's granddaughter, LadyVoyager. She is on the 2nd floor of the MeadowTon Inn. She'll have you look around for her diary, which is in the the cabinet in the back of the stairs on the 1st floor of the Inn. You then return it to her, and she'll tell you a clue that it said. It was something along the lines of "Find some palm trees you can count. The encyclopedia is under number 5." After that, go to Big Forest Isle. On the west side of the north beach, there will be a couple of smaller palm trees, decreasing in size. There are two that are very close to each other. Dig around those, and you'll find the encyclopedia. Then give it to MadamPortsMouth :3
