Go to C:\Users\(your username)\Music\iTunes and rename the file "iTunes Library.itl" to "iTunes Library.OLD"

Alternatively, there is an option within iTunes itself, not to open iTunes each time an iDevice is connected to your computer. It can be found under the preferences or settings on the menu tab when you open iTunes. Uncheck the option and iTunes will then not open in future.
