There are several old answers to this question from many years ago when Jackie Chan was filming 'Who Am I?' and he described some of his daily training routine in the autobiographical documentary he made called "Jackie Chan. My Story". yes he has ... many people have doubled for Jackie in various ways in various movies. For example Stanley Tong did the stunt driving in 'Rumble in the Bronx' for Jackie. Mostly members of the JC Stunt Team will double for him. Although if you make a habit of reading the credits you can see a variety of names listed as doubles for Jackie. Mars, Hu Ge, Yuen Biao, Andy Cheng and Ken Lo have all doubled for Jackie at one time or the other for various reasons.

This does not mean he does not do his own stunts but it's all about making the best movie possible so sometimes Jackie is directing, sometimes some one can do something better or sometimes he just doesn't want to get hurt. He was doubled for some of the falls in Shanghai Noon during the bar fight. So really it depends on the circumstance. Jackie does 'ALL his own stunts' started as an advertising gimmick when 'Rumble in the Bronx' was released in the USA.

Jackie has also been doubled for non-stunt scenes for example due to the reshooting of The Medallion a scene involving 'Jackie' on the motorcycle with Claire Forlani was doubled as Jackie could not return to Ireland to shoot that scene at that time.

Jackie Chan worked in movies from when he was only 8 years old as a child actor. Then he became a stuntman because of his training in Peking Opera at the China Drama Academy. He worked very hard to learn as many new skills as he could to become a stunt coordinator and actor but he still was not famous. He made several movies for a famous Hong Kong Director, Lo Wei, but Lo Wei tried to make Jackie to act like Bruce Lee. This did not suit Jackie's personality. He got a chance to show his own style when he made Snake in the Eagle's Shadow and Drunken Master. These two movies were so different because they had comedy in them that this is what made Jackie Chan a star.

I don't think that is any Jackie Chan movie. The only movie I can think of is Shanghai Noon where Jackie Chan uses his queue (long plait forced on Han Chinese by the Manchurians) as a weapon and holds it in his teeth several times during the movie to keep it out of the way.

Jackie Chan was born Chan Kong-sang which means born in Hong Kong but there was a hidden family history that his father only told him about after his mother died in 2002. Charles Chan (Jackie's father) had worked for the Nationalist Party in China and fled China in 1949. Fearing reprisals from the Communist Party he changed his name from Fong Dou Long to Charles Chan by taking his wife's name as his own. Charles secretly registered Jackie in the family book (the traditional way of keeping birth records in China) as Fong Si Long. So therefore Jackie's real name is Fong Si Lung but his official name is Jackie Chan Kong-sang because Jackie did not change his name after his father revealed the truth about his past.

During his career as a fight choreographer it is said that Sammo Hung worked with stars such as Jackie Chan, King Hung and John Woo. Sammo Hung is documented to have starred in over 75 films. A couple of the films he starred in were Bodyguards and Assassins and All About Ah-Long.
