The action has nothing to do with chemical reactions but is a physical process. It doesn't pose risk to person who consumes Coke with Mentos. Fizzing is normally felt in the mouth when drinking Coke and is sign of the carbonation releasing carbon dioxide from the drink. The addition of Mentos speeds up the process and would not do any harm from the gas itself. Of course, one may imagine an extraordinary circumstance where someone would finished the whole bottle of carbonated beverage without burping and with all gas still in liquid. Noothing is smooth, everything has little "potholes", although they are minisclue and not visible. Mentos have a lot of these little holes in them, where air can get trapped. When dropping a mento into a soda, the air bubbles release, this causes some bubbles to form and exit the bottle. The roughness of the candy also reacts with the gas in the soda, forming more bubbles that are trying to get the the surface. These bubbles form the "geyser".

the experiment also works on lots of other things however, it works especially well on mentos because mentos have a lot of nucleation sites. these are areas that co2 can create bubbles. they can be scratches on a surface or anything. the compressed co2 from the soft drink then create thousands of bubbles in each nucleation site.
