What is the middle layer of a peach?
The pit, nut, stone or peach seed is the middle part of the peach. In some related plants, such as the almond this seed is edible, however, for most peach trees the pit contains a number of poisonous chemicals for defense including cyanide.
To germinate the peach seed several things need to be done. "Seeds of Woody Plants of North America," by Young, contains a description of some of the techniques for germination. The seeds must not dry out but need air and should not be allowed to rot. In most cases the seed must be exposed to a period of cold but not too cold. One way to do this is to plant the seed outdoors soon after consuming the peach, do not let the seed sit on a counter to dry out! This should be done in a place where rodents will not eat the seed but the seed will receive water and nutrients. Abrasion is also often used to weaken the seed coat. Seeds are often placed in a tumbler with stones to wear away the coat. My wife and I have one wonderful peach tree that simply grew from a canning session where we pitted the peaches at the edge of our garden. Deer, however, also love peaches so some protection is usually needed for the tree if living in the country.
Peaches are a dicotyledonous plant, meaning the seed consists of two halves, two primitive leaves that sustain the growing plant. If your library has the books Hortus I or Hortus II, these have descriptions of simple planting and growing techniques

What are the traditional ingredients for Albanian stewed peaches?
Lemon juice, liqueur wine, peaches and sugar are the traditional ingredients in Albania's stewed peach dessert.
Specifically, peaches are washed and peeled. They then are placed in boiling water that already has lemon juice added. The ingredients are boiled together for three (3) minutes.
The peaches are drained, cut into halves and de-seeded. The seeds and then sugar are placed back into the boiling water and boiled for ten (10) minutes. The seeds then are removed.
The peaches are added to the syrupy mixture of water and sugar. All of the ingredients are then brought to a boil. After the mixture cools, liqueur wine is added.
The dessert is served cold.

Is the cyanide found in peach pits and bitter almonds harmful if ingested?
Not sure about it being "cyanide," at least in the true (poison) meaning of the word. Maybe there's traces of the chemical in the pits, but surely eating one or two won't hurt you. I remember my grandfather used to eat them here and there when he had a peach--he cracked the pits with something and extracted the seed and ate it. He lived to 94. Don't be worried if you ate some, just don't eat one everyday for the rest of your life.

How do you cut peaches into segments?
Hi First of all peaches don't have segments. Citrus fruit such as oranges and grapefruits do. Anyway...First take a paring knife - that is the small (roughly 1.5 inch blade) and cut the peach in half. Grasp each half of the peach gently and turn in opposite directions - this should free the stone from one half of the peach. Set this half aside. Then, to remove the stone - BE CAREFUL - set the half still attached to the stone on a counter and strike the stone with your paring knife. Hold the peach in your palm and rotate the knife. The stone should now be easily removed. You can now proceed slicing each half of the peach. Place the peach with with the end that was attached to the stem facing away from you. You should begin slicing the peach at an angle which should reach 90 degrees once you get to the top of the peach continue slicing evenly to form uniform pieces. Hope this helps you! Sorry if I was too specific - I went to the Culinary Institute of America and...Food is my thing!
Best Wishes and Happy Peach Slicing!
