However I only use fresh mozzarella packed in a brine or water solution. If you have been using low moisture cheese this may be your problem. Fresh mozzarella is more expensive but well worth it. There is no way to pin down the origin of pizza, but the most famous pizza - the Margharita - is recorded as being created for the then Queen. Well crisped bread topped with sugo, mozarella and basil gave it the Italian national colours of red, white and green. It went from a family or farm - read, peasant - snack to a snack fit for a queen, and never looked back.
