Yes. Many pot pies are actually sold frozen. If homemade, it would be best to vacuum seal the pie before freezing it. If you do not have a vacuum sealer, wrap the pie tightly in plastic wrap, and then foil. As long ans the plastic wrap does not fall down the side of the pan, and the foil covers it completely, you can take from the freezer directly to the oven.

We like to make small turkey pies with leftover turkey, in the 8 inch aluminum pie pan. These are very much like the frozen pot pies from the grocery. We freeze them with an uncooked crust and cook them frozen at 425 degrees for 45 minutes.

There are two wings, two legs, two thighs, and two breasts so, as a general rule, there are considered to be eight pieces in a chicken.

Occasionally the back can be included as a piece and so can the neck, in which case you could have up to ten pieces but this is not normally so.

Depending on how you want to cook and serve your chicken, you might find it better to cut through each breast and leave part of it attached to each wing, which will make each individual portion a slightly more equal size.

It depends on what veggies are in your pot pie. If you put enough veggies in the pie, you don't need a side dish--at my house the whole point is to have a one-dish meal. But if you have a very meaty pie (and thus, necessarily, light on veggies) you could serve any vegetable with it. Try to go with deep-colored vegetables or crisp vegetables to complement the (presumably) golden, flaky crust.
