to play a flat you move your finger one chromatic half step down from the original natural note, or one half step higher from the natural note one full step from original note (this is called an enharmonic, two different ways to play the same pitched note, example G-sharp is the same as A-flat)
if you meant actually playing A-flat on the cello, you can use a low first finger on G or a high fourth finger on D (if in 1st position)
