Why has your slow cooker got a rubber stopper in the hole on the lid?
The main pressure relief valve in the center allows steam to escape once the pressure reaches a maximum volume. Should that relief valve be blocked with food particles the rubber safety valve has a slightly higher pressure tolerance and will pop off releasing pressure as a failsafe.
Neti pot is a small teapot used to give yourself a salt water nasal wash to clear the sinuses. You can compromise with a small container with a spout on it. If you use tap water, you must boil the water and emerge the container you use in it to sterilize it as well. Plain tap water is stagnate and can cause dangerous infections. Tilt your head over a sink and tilt you head at a 45 degree angle and pour the solution in one nostril causing it to drain out the opposite nostril Repeat for other side. 1/4 tsp of salt to 8 ozs. of boiled or distilled water.

How long is too long in a slow cooker?
really I would say no more than 12 hours. I have left chicken legs in a stew longer than this (overnight) and it came out horribly watery, fibrous and tasteless :-(
Following my own experiments I would say that lamb stew will take up to 24 hours, beef around 18 hours ( the fattier the longer) and chicken and pork no longer than 12 hours. But as I say, even lamb and beef will taste better after 12 hours than 24 ;-)
Where can you find a replacement for the removable stoneware for a rival crock pot?
The simple answer is that you can't. I've been trying to find a replacement for my 6 qt Rival Crock pot for almost a year. The manufacturer does not replace it, nor do any other sites. I am so angry that they would sell this product and expect you to buy a new one when the stoneware, after only a few uses, cracks.

Can a crock pot be used for the sous vide bath if the food has been appropriately vacuum sealed?
I would advise against this. The whole point of a sous vide method of cooking is getting moist, perfectly cooked food by vacuum sealing it in a sous vide bag and then cooking it in a water bath with precisely controlled temperatures for optimal results. You just don't have that kind of control with a crock pot, I doubt you could even approximate it.
I would think you would have better results putting a vacuum packed bag of food in a saucepan of simmering or boiling water on the stove, and using a digital thermometer in the water to guide you to manually adjust the height of the stove burner.

Does alcohol burn off when using slow cooker recipes?
No I think not. A slow cooker should get hot enough to burn off (evaporate) the alcohol, especially if you cook on high since this is over the boiling point of alcohol. But the problem I see is the lid of the slow cooker is designed to catch the evaporating liquid and return it to the food. This is why the food does not dry out when you cook it for eight hours. Thus in the end, I think much of the evaporated alcohol will condense on the lid and then would be returned to the food. Net loose of alcohol, logically would seem not much. Be careful.
