Plasma is simply an ionized gas. It doesn't matter what type of gas it is, as long as it IS a gas. Air is a gas, and when it becomes ionized, it is converted to plasma - this is what we call lightning. And, of course, I'll say it again - any charge in motion generates an EM field, and therefore plasmas generate their own EM fields. This is all I will say for now - that lightning (electron arcing) is the simplest way to create a plasma saber. A good guess, but not quite accurate. The actor who portrayed Mace Windu (Samuel L. Jackson) demanded that his Light saber be purple if George Lucas wanted him in the movie. If you are looking for a Canon (or In-story) excuse, then its because the Jedi Order only had access to so many Lightsaber Crystal Caves (my name for the caves where jedi find the crystals that are the heart of their lightsaber) at that point. The crystals in the lightsabers are what give them each their own unique colour. At that time the Jedi Order only had access to green and blue crystals (in general). Other colours were less common.

There is some side story about Darth Maul coming back to life with machanical legs, but that's stupid and hasn't been proven as cannon. It's says that he duel Obi-Wan on Tattooine before being shot in the back of the head by Uncle Owen. I mean seriously, a Sith Lord that comes back to life is killed by a farmer with a blaster, a farmer that was easily killed but a group a stormtroopers later on. Darth Maul didn't come back to life, he died when Obi-Wan killed him.
