Belgian endive is formed into a cylinder with smooth oval leaves that are tightly packed together. Curly endive looks more like a head of lettuce in that is spreads out and each leaf has curly edges. The flavor is very similar.

Endive was first discovered in 1830 by a Belgian farmer named Jan Lemmer. He left some chicory roots in his cellar, they were an inexpensive coffee substitute, went away for several months and, upon his return, noticed that they had sprouted with little heads of endive.
