Hi,
It sounds like you have air in the cooling system. If you "get lucky", it is only because you have a slight leak and some air has gotten into the system. If you are "not so lucky", then the air could be getting into the system because of a problem, such as a blown head gasket.
First thing to do is fill the cooling system at the radiator (with the engine COLD) - make sure the radiator is absolutely full. While filling the system, try to bleed out any air in the system by opening the bleed screws on each side of the engine. I have provided a link to show you where they are. Once coolant start to come out of each screw, close it off quickly to seal the air out & the coolant in.
Now out the radiator cap on and fill the overflow tank about half full. Start the engine and allow it warm up to normal temperature. During this time, keep an eye on the overflow tank and make sure it STAYS about half full. Put more coolant in if needed. Allow the engine to cool. Then repeat the cycle of the next few days, always watching the overflow bottle.
If any are is injected back into the system, you will have to do some troubleshooting to find the source. Hopefully it is just a minor problem, and refilling and bleeding the system will take care of it.

most likely the thermostat, but these vans also have a history of blowing head gaskets...... It would help if you described symptoms
The Thermostat on a 2000 Chevy Venture is located on the drivers side of the engine, it is mounted under the throttle-body of the fuel-air intake, u can follow the hose up to it, I have changed mine two time, although the throttle-body must be removed to access the Thermostat, and there are only three screws holding the thermostat housing on, it is somewhat hard to get at and I suggest that only someone who is familiar with working on cars try it.
My 2000 Chevy venture gets 24- 25 on the highway.

The thermostat is located on the drivers side between the engine block and exhaust pipe that crosses over the transmission. Removal is a bear as you must remove the exhaust pipe to get to the bottom bolt of the thermostat housing. Good luck!
