Potatoes can be what we call an easy keeper when they are raw. If kept in a cool dry place they can last up to 2 months. As soon as a potato is dug up it starts to dry up.
You can control this process by keeping it cool and dry. The longer a potato sits the dryer it becomes. Use the potato before it loses most of its moisture.

∙ 15y agoFood left out of the refrigerator is okay to eat for about 2 hours. If the temperature is under 80 degrees. The longer a food stays in the danger zone the more risk you take eating that food. Foods should either be kept hot or kept cold before eating to be really safe.
