Most oil pans are held on with a number of small bolts, 10-18 of them. First you get a pan to drain the waste oil into and a sheet of cardboard or old newspaper to lay under to catch any spills. I then remove all the aforementioned bolts. I find it easiest to do this with a 1/4 or 3/8 drive socket with a 9" extension from a ratchet handle. I remove all except one bolt at each end, then take them off as I support the oilpan with one hand. There will still be a small amount of oil so be careful you don't spill it. I clean the pan and renew the gasket every time, and change the oil filter at this point.
The transmission pan is very similar to remove, except that few of these have drain plugs, so you remove it full of fluid - that can be tricky. In the case of tranny pans I always change the filter and gasket as well.

I would recomend cleaning the oil pan out while you have it off and you can also add a magnet inside your oil pan to collect any harmfull metals that might wind up in your oil or you could buy a drain plug that is magnetic.
