Wines, like scotch and Bourbon whiskey, can be made either from one or more varieties of grapes or grains. Most wines are blended from many species of grapes, both for reasons of taste (to get the best out of flavor, tannins, acidity, color and aroma) as well as for economic reasons. Varietal wines are usually more expensive being made from one grape variety, and also have more distinguishing characteristics of that particular grape without "muddying" the waters with a "kitchen sink" approach. A little bit like single malt scotch versus blended scotch or bourbon.

Varietal is not necessarily synonymous with "better". Non-varietals are often more consistent from year to year as the vintner blends juice from different kinds of grapes to produce the expected flavor profile, while a given year's harvest of a particular variety of grape may be unusually tart, or sweet, or have some other pronounced characteristic that makes that year's wine atypical.
When people talk about a particular vintage being "a good year", what they really mean is that that year the vintner lucked out and growing conditions that year produced a harvest that turned out to be especially well-suited to making wine. Both varietals and blended wines can have some years that are better than others, but generally the highs aren't as high and the lows aren't as low as they can be with varietals; the blending process "evens things out", so there's more risk with varietals ... which is one reason the good ones tend to be more expensive.
