Raw potatoes should NEVER be refrigerated, since doing so brings out all the sugars & starches. Cooked, however, may be stored in the fridge for no more than two days,making sure they are covered.

Potatoes should never be kept in the fridge because the starch in them will turn to sugar. Kept in a dry, dark place at room temperature they will last between 1-2 months. When they go bad, you will be able to tell by their softness and wrinkles on the skin.

This is not only for potatoes but in many cases for all types of food. Try not to keep it in the refrigerator more than three days if you still want the freshness. To help extend the freshness in the potatoes i recommend squeezing some lemon juice. This actually works for my potato salad. Just try not to keep it in more than a week, it may still be good but the quality of the taste will change.

After purchase from the store and properly stored, fresh potatoes are good for 2-4 weeks. They should not be stored in the refrigerator.

However, potatoes may be purchased, stored and prepared in many different ways, each which can result in a different expiration date.

Dependending on how theyre cooked. 4 days to two weeks. a baked potato will obviosly keep longer than mashed.
