Modern Israel was established on May 14th, 1948. If you are thinking of ancient Israel then there are a number of possible dates. The Exodus began around 1441 BC (based on 1 Kings 6:1) so that is an important event as far as the existence of Israel as a nation. They entered the land of Canaan around 1401 BC. It all depends on when you decide the ancient nation of Israel was first established as a separate nation. If it was in the period of the monarchy then you are looking at around the year 1000 BC.

There is confusion as concerns "Palestine" is that it refers to three separate things.

Definition 1 - Regional Palestine
Palestine was used as early as 2500 years ago to refer to the general area of the southern Levant. It was never used as a governmental reference for the territory until the Romans renamed the province of Judea as Syria-Palaestina in 135 C.E. as revenge for the failed rebellions of Jewish Zealots. However, this territory would never be independently ruled and would always be subject to a larger empire governed elsewhere.

Definition 2 - Mandatory Palestine
The British Mandate of Palestine covered all areas between Egypt, Jordan, Lebanon, and Syria. It was a relatively small territory that was also bounded by the Mediterranean Sea in the northwest and has access to the Gulf of Aqabah in the south. This mandate was initially founded in 1919 and had its borders adjusted to exclusively Cisjordan territory (i.e. territory west of the Jordan River) in 1922.

Definition 3 - State of Palestine
The current State of Palestine, which is ruled by the Palestinian Authority, is de jure (this means by law) a small grouping of city-states in the West Bank and the Gaza Strip. De facto(this means in reality) the Palestinian Authority, the internationally recognized leadership of Palestine, has lost control of the Gaza Strip to Hamas as of the Summer of 2006. This state was first declared in absentia (in Tunisia) in 1988. However, it only came to have a government and territory as a result of the Oslo Accords of 1993.
