Chickens would not have survived to modern times if eggs went bad unless chilled. Even a little bacteria growing inside an egg would kill the chick. Hens kept in healthy conditions lay healthy eggs that do not need constant refrigeration. North Americans refrigerate to guard against that extremely rare egg (1/20,000 even in factory-farmed eggs that are laid by highly stressed hens) that has some salmonella inside the egg.
