In terms of nutrition it's no difference between MTBing and any other endurance sport. If you really want to prep for a (long) ride, look up carbo-loading as done by marathon runners, triathletes and similar. Otherweise, just have a light snack and you're good to go.
There's nothing special about a long bike ride when compared to other periods of hard physical work. Before the ride you should try to get plenty of carbs(hint: pasta) then as you ride you just have to figure out what your system can take. Rolls with peanut butter are high in energy and fairly easy to eat while riding. Bananas are also very practical. Various cereal/nut bars are also good. Don't forget to keep hydrated.

Diet and exercising will help. Cardio exercising is one of the best ways to loose weight. Do not eat too much fatty foods like fast food, fatty meats or any other products that are high in fat because this will add more fat to your arms, hips, legs and belly.
It all depends of course on what you eat and how much you eat. But it has recently been shown in a study that exercising on an empty stomach is more conducive to weight loss than exercising with food in the stomach.

Bare fruit snacks can be found at any organic health food store or natural food market. Eat them after exercising, not before to avoid stomach cramps, and a nice greek yogurt would have more protein.
Because it might get all mouldy and you can get sick, sometimes its still eatable before its out of date but its your choice to take the risk to eat it or not it depend what it is and how it looks :)
