Why would your upright freezer stop keeping baked goods frozen but every thing else stays frozen rock hard even after more than a week?

The problem is likely due to the coil freezing up, restricting air movement through the coil. You need to remove everything from your freezer, then take off the cover to the coil, and let it either air thaw, or use a hand held steamer to melt the ice.
When you put the food back in, reposition it so it doesn't restrict airflow around the coil. This is actually a common problem with many frost-free freezers.
